New Mac and Cheese Food Truck at Disney Springs REVIEW AND PHOTOS

Hi everyone! How was everyone's week? I'm sorry I missed last week's blog post; but school got really overwhelming this past week with exams and deadlines for projects. I'm back though!
Due to the overwhelming week, my sisters and I were in desperate need of a break: So, we took a little improv trip over to Disney Springs Thursday night and spent our Friday at the Universal parks and Magic Kingdom which was very much needed, but we're not here to talk about that. We're here to talk about the new, glorious mac and cheese food truck that just opened at Disney Springs!
My mom tagged along with us for the little trip; and we all hip-hopped over to get some cheesy-goodness as soon as we slid into the parking lot.
I say if you're not completely familiar with the Disney Springs layout and such--which to be honest, I'm not too much either--the new food truck will be located on the West-Side, located right next to the Starbucks. To give you an idea, we parked in the orange garage which is conveniently placed right in the West-Side area and only had to walk about five to eight minutes and once we found the Starbucks, we found the food trucks. I would say if you're going with primary intentions of trying these goodies, than I would highly recommend parking in the orange garage if you can.
We arrived pretty late in the evening: it was about 10:00 p.m. when we arrived; but when we showed up, the night was still filled with life by a live cover band that was playing right between the food trucks and the Starbucks. It was a fun atmosphere; there were couples slow dancing and even a couple of guests who were twirling around and dancing amazingly. It was a nice introduction to the evening!
Now, for the moment of truth: the mac and cheese.
They had five, unique options to choose from alongside your typical Coke products as options for drinks:
There was barely a line when we got there--there had to be maybe two people ahead of us before it was our turn to order. My mom, little sister and I decided on the Six-Cheese Crunchy Mac and Cheese while my older sister picked the Bacon Cheeseburger Mac and Cheese. They were pretty quick with our orders and we only waited about ten minutes for our steaming, mac and cheeses.
Let me start off by saying: Their portions were HUGE--much bigger than I had expected:
The pictures really don't do the portion size justice. I would say come very hungry or you can definitely split one with a friend. My younger sister, who has a notorious small appetite, eyes bugged when she saw the size of the bowl. We mutually agreed on sharing one next time we go.
The topping of the Six-Cheese Crunchy Mac is some chopped bits of Cheetos and chives; and I'll say that the Mac was pretty good; but I almost wish they would've incorporated the topping more throughout the dish because it really did add flavor to the cheesy entree. The first layer was glorious, cheese heaven but once you got past it--it kind of downgraded from the first few euphoric bites. My older sister, who had the Bacon Cheeseburger one, agreed that she had the same experience with hers; but she did enjoy it overall. She said the flavor of the ketchup, mustard, and pickles was actually very good mixed in with the macaroni and cheese and added a good *oomph* to it.
Overall, I would go back again. I think there is room for improvement; but then again, this place just opened a little over a week ago, so I understand it's still going through their beginning phases. I'm looking forward to seeing how it will evolve in the future!
